- 2 cups almond flour
- 4 tbsp coconut flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 2 flax eggs* can use 2 standard eggs for non-vegan version
- 6 tbsp melted coconut oil
- 4 tbsp maple syrup
- *To make one flax egg soak one tbsp of ground flax seed meal with three tbsp water for five minutes.
Caramel Sauce Ingredients:
- ¼ cup coconut sugar
- 2 tbsp coconut oil
- 1 tbsp molasses
- ¼ cup non-dairy milk
- Pinch of salt
- 1 green apple sliced into thin segments
- ½ cup pecan halves
Combine all ingredients in small saucepan and cook on medium heat for 9 minutes, while mixing every so often. It will thicken as it cools.
Preheat oven to 350 degrees.
In a large bowl, mix together all dry ingredients, then add rest of wet ingredients.
Mix with rubber spatula, then transfer to an 8” skillet.
Line top with sliced apples.
Drizzle top with caramel sauce and sprinkle pecans, bake for 25 minutes.
Let cool at least 10 minutes, and enjoy!
