If you don't have much time in the morning for a fancy breakfast but are in a "fancy breakfast" kind of mood, these low carb, sugar free waffles will be your new BFF. They're fluffy on the inside with a crunchy exterior. You won't even miss the sugar!
Yields: 2 Belgium sized waffles
2 cups almond flour
¼ cup arrowroot flour
1 tsp baking powder
½ tsp baking soda
¼ cup monk fruit sweetener
½ cup non dairy milk or water
½ cup coconut oil
Whisk together all dry ingredients and add in all wet ingredients to that.
Pour into greased, pre-heated waffle iron and cook until browned.
