Fudge Cake Ingredients:
- ½ cup almond flour
- ¼ teaspoon baking powder
- ⅓ cup cocoa powder
- 2 flax eggs
- 3 tablespoons maple syrup
- 4 tablespoons cashew butter
- 2 tablespoons melted chocolate
- ¼ cup water
- ¼ cup cashew butter
- 1 tablespoon maple syrup
- ½ teaspoon vanilla
- Pinch of salt
- ¼ cup chopped nuts
- ¼ cup chopped dark chocolate we like using our Almond Sea Salt Bar
- ¼ cup melted chocolate we like using our Almond Sea Salt Bar
For the Fudge Cake:
Preheat oven to 350 degrees.
Combine flour, baking powder, and cocoa powder in large bowl.
Add rest of ingredients and continue mixing until well combined.
Pour into a 6” square pan and bake for 25-35 minutes, until center is set.
Let cool completely.
For the Filling:
Combine all ingredients in small bowl with rubber spatula.
Once cake is completely cooled, cut in exactly in half vertically down the center.
Very gently, press filling over one half of the cake and press other half over the filling, creating a sandwich.
Let set up in freezer for 20 minutes.
Pop out of freezer, and cut into 4 squares, then cut each of those squares in half again, so that there are 8 total.
Dip each one into chocolate and shake off excess. Let setup in fridge for 10 minutes.
Store in an airtight container in the fridge for up to a week. Enjoy!
