- 4 tablespoons coconut flour
- ⅔ cup almond flour
- 1 teaspoon baking powder
- 4 tablespoons monk fruit sweetener can use any granulated sweetener
- 2 tablespoons orange zest
- ¼ cup fresh orange juice
- ¼ cup coconut oil melted
- 4 eggs
Preheat oven to 350℉.
In medium sized bowl, whisk together coconut flour, almond flour, baking powder and monk fruit sweetener.
Grate the orange to get the zest needed, then cut and juice it.
Add the zest, juice, oil and eggs. Whisk again until a smooth batter is formed.
Divide batter into 6 cupcake liners and bake for 25 minutes or until set in center. Enjoy!
Level: Easy Substitutions: Any fruit juice in place of orange. Any oil in place of coconut. Eggs cannot be replaced for this recipe.
