Chocolate Hazelnut Spread
¼ cup hazelnut butter*
2 tbsp 72% Primal Chocolate, melted
1 tbsp cocoa powder
1 tbsp maple syrup
1 stick soft butter
½ cup maple sugar
½ cup cassava
¼ cup cocoa powder
1 tsp baking powder
½ tsp baking soda
1 tsp vanilla
1 tbsp cold brew concentrate(optional)
To make the spread, puree all the ingredients together until uniform and smooth butter forms.
Set in fridge until firm to the touch and scoop out quarter sized balls and set in freezer.
While waiting for balls to set, start the cookie dough.
Beat together butter and sugar until fluffy.
Scrape down sides of bowl and add egg, vanilla and cold brew.
In seperate bowl, whisk together cassava flour, cocoa powder, baking powder and baking soda.
Slowly incorporate into butter mixture.
Scoop out 1 ½ inch balls of dough and push the frozen hazelnut butter balls into center, wrapping them completely in cookie dough. Repeat this for all cookies and stick in freezer again to firm up. Once firm, stick in a 375 degree oven for 10 minutes. Let cool for 10 minutes before eating and enjoy!!!
