3 tbsp melted coconut oil
¼ cup melted 72% chocolate
1.5 tbsp cocoa powder
¼ cup maple sugar
½ cup almond flour
2 mint cups, chopped
Mint Matcha Icing:
5 tbsp softened cream cheese
2 tbsp milk(any kind will work here)
1 tbsp maple syrup
1 tbsp matcha powder
2 drops mint extract(a little goes a long way)
-Mix together the oil, chocolate, cocoa powder and sugar.
-Add egg and mix completely.
-Add almond flour and chopped cups.
-Pour into parchment lined loaf pan and bake at 350 for 20 minutes.
-While cooling, start the icing.
-Place all ingredients in mixer or bowl, and beat until combined and fluffy.
-Spread icing over cooled brownies and enjoy!
