- 1 cup almond flour
- 2 tablespoons coconut flour
- 1 teaspoon baking powder
- 3 tablespoons granulated monk fruit sweetener
- 1 teaspoon cinnamon
- ¼ cup coconut oil melted
- 1 egg
Cinnamon Sugar Mixture:
- ¼ cup granulated monk fruit sweetener
- 2 tablespoons cinnamon
For the Cinnamon Sugar Mixture:
In shallow bowl, mix together cinnamon and sugar. Set aside.
For the Cookies:
Preheat oven to 350℉.
Whisk together almond flour, coconut flour, baking powder, monk fruit and cinnamon.
With a rubber spatula, mix in oil and egg.
Scoop out into 1-1½ inch balls and roll around in the cinnamon sugar mixture.
Place on baking sheet and bake for 12 minutes.
Let cool for 10 minutes before enjoying!
