    Cashew Butter Cookie Sandwiches

    Ingredients

    Cashew Cookies:

    ½ cup cashew butter

    ½ cup maple sugar

    1 egg

    ½ tsp baking soda

    1 tsp baking powder

    1 tsp cinnamon

    1 tsp vanilla

    ¾ cup oat flour

     

    Instructions

    Beat together butter and sugar.

    Incorporate the egg and vanilla until uniform mixture.

    In seperate bowl, whisk together all dry ingredients and slowly add to the butter mixture.

    Once dough is formed, spread flat on a parchment lined baking sheet and bake at 325 for 10-15 minutes or until just browned and the center doesn’t jiggle.

    Let cool completely, then with the rim of a glass, carefully punch out cookies.


    Ingredients

    Chocolate Hummus:

    1 can unsalted chickpeas

    4 tbsp melted coconut oil

    5 tbsp cocoa powder

    3 tbsp melted 100%

    4 tbsp maple syrup

    1 tsp vanilla

    ¼ tsp salt

    1 tsp cold brew coffee(optional)

    2 tbsp water

    Instructions:

    Place everything in food processor and blend until completely smooth.


    Spread 1 tbsp of hummus on a cookie and sandwich it with another one, eat right away or store in an airtight container in the fridge!

    Chocolate Chip Brownie Sandwich

    Paleo Chocolate Chip Brownie Sandwich

    Ingredients
    • 1 cup chopped Signature Dark Primal Chocolate
    • 1 stick butter
    • 3/4 cup maple sugar
    • 1 egg
    • 1 tsp vanilla
    • 3/4 tsp sea salt
    • 1 tsp baking soda
    • 1 tsp baking powder
    • 3/4 cup cassava flour

    Directions:

    1. In stand mixer, beat together the butter and sugar until light and fluffy.
    2. Scrape down sides and add egg, vanilla and salt.
    3. In separate bowl, mix together dry ingredients.
    4. Fold in chopped chocolate.
    5. Scoop onto baking sheet and bake at 350 for 12 minutes.

    Brownies

    Ingredients:

    • 10z Signature Dark Primal Chocolate
    • 1/2 cup coconut oil
    • 1 tsp vanilla
    • 1 tablespoon finely ground coffee
    • 3/4 cup maple sugar
    • 3 tbsp coconut flour
    • 2 tbsp tapioca starch
    • 3 large eggs
    • 1 cup chopped chocolate (your favorite flavor!)

    Directions:

    1. Over a double boiler, melt chocolate and coconut oil together.
    2. Take off heat and stir in vanilla, coffee and sugar. In separate bowl, combine flours and add to chocolate mixture.
    3. Whisk in eggs one at a time.
    4. Fold in chopped chocolate and pour into brownie pan and bake at 350 for 25-30 minutes until inserted toothpick comes out clean.
    5. Let both cool completely and spread melted chocolate on the bottom sides of 2 cookies. Punch out the brownies the same size as the cookies and sandwich in between the cookies.
    6. Let set and enjoy!
